I'll introduce to you about Aspic. This is a french food. It is often used as a hors d'ouevre, appetizer, in full course meal. It is also called meat jelly. 


Aspic or meat jelly is a savoury gelatin made with a meat stock or broth, set in a mold to encase other ingredients. There are many type, made up with meats, fishes, vegitables, mushrooms and so on. By jellifying the ingredients, the texture and taste of the food can be preserved. Moreover, the jelly will be solidified with dashi and other ingredients, making the jelly very tasty on its own. A similar dish exists in Japan and is called nikogori.
